Head of Protein Science
The planet is on fire and we'll need an ocean to quench it. At
Trophic, we're building an entirely new food system that supports a
wild and thriving planet - starting with the ocean. Rather than
burning down the rainforests to grow soybeans to feed cattle, we're
supporting forests underwater to create an entirely new protein
source - protein from seaweed. Rather than growing protein in tiny
bioreactors, the ocean is our bioreactor, and Trophic protein
requires no land, no freshwater, and no fertilizer to grow. It's a
superfood for people and the planet.
Protein from the ocean is the future of protein. It's inevitable
that in the next few decades we'll be getting the majority of our
protein from the ocean. -But we're not willing to wait - Trophic is
starting now. We've developed a method to transform seaweed from
plant to protein, and we've turned that protein into our first
product - a delicious new plant-based bacon. Our plant-based bacon
is being brought to market under our CPG brand UMARO Foods.
Trophic was co-founded by two experts in the seaweed cultivation
and plant-based foods industries. We're funded by leading industry
and impact investors who want to make a difference, and we're
moving fast. -Our planet needs Trophic and Trophic needs you. -We
need all hands on deck to make this a reality.
We're looking for a curious, motivated, and independent scientist
to lead our R&D efforts to purify and characterize plant
proteins from macroalgae, and to develop new methods to enhance
their functionalities in novel foods.
What you'll do:
Plan, manage, execute protein research from bench to pilot scale to
develop and improve novel methods for high yield protein extraction
from a variety of seaweed species.
Evaluate fractionated proteins using analytical, textural, and
Develop methods to characterize protein functionality within model
Conduct data visualization and statistical analysis of experimental
results, and interpret and communicate findings to
Collaborate with our process engineers to test and optimize protein
processing methods at pilot scale.
Develop methods to separate and preserve functionality of seaweed
proteins and hydrocolloids, and improve our understanding of their
interactions in foods.
Serve as a subject matter expert in plant protein research and
mentor and develop internal talent.
Participate and lead in-house and external partner collaborative
What you'll bring:
A PhD in chemical engineering, biochemistry, protein chemistry,
food science, chemistry, biology, or a related field.
Alternatively, a master's degree in the above fields, with 3+ years
of relevant industry experience.
Experience purifying and characterizing plant proteins and testing
their use in food and beverage systems using analytical methods
such as rheology, texture analysis, particle size, scanning
microscopy, proteomics, CD/DSC, SDS-PAGE, etc.
A demonstrated ability to conceive original ideas, clearly
articulate them, and design experiments to test them under tight
The ability to manage and organize multi-disciplinary projects and
see them through from initial planning to execution and
Effective and direct communication skills; ability to present
research findings to both scientists and non-technical
An 'all hands on deck' attitude to do whatever needs to be done
alongside the rest of the team.
Bonus if you have:
Understanding of the structure-function properties of proteins,
polysaccharides, and fats within complex systems such as
hydrocolloids, emulsions, foams, and/or gels.
Experience with the application of physical, chemical, and
enzymatic treatments for the enhancement of the functional
properties of proteins, and knowledge of analytical methods to
characterize these properties such as HPLC, GC-MS, and/or IC.
Experience evaluating the sensory properties of proteins and food
